How To Prepare Ekuru (White Moi Moi) With This Simple Recipe

Ekuru, also known as Ofuloju or White Moi Moi, is a dish from the Yoruba islands, especially those from Kwara and Ondo State in Western Nigeria.

It is made of pea beans like ordinary me, but instead of adding all its ingredients to bean paste, a special sauce is prepared for its meal.

Ekuru is consumed with Ata DinDin (fried sauce) or Eko Agidi.

Ekuru is very easy to prepare and very nutritious. The way to do this is to load protein and enjoy each one.


– 360 g of beans with black or brown eyes

– One small onion

– One big cube

– Salt to taste)

– 600 ml of lukewarm water

– 2 tablespoons vegetable oil (optional)


  1. Dissolve the pea beans in water for at least 3 hours. It makes it easier to mix at the time of use.
  2.  Mix the beans with some water to get a smooth paste. The consistency should be similar to that of me. It is neither thick nor too light; it should be in the middle.
  3. Pour the mixture into a bowl, add the vegetable oil to allow the dough to ecu, and mix quickly.
  4. Add salt to taste and some water as needed. Stir well for 10 to 15 minutes until the right mix of all ingredients is obtained with a hand blender or wooden spoon.
  5. Put a little water in a plentiful enough pan and bring it to a boil. Then add the base (foil or aluminum foil) to the ecru envelopes.
  6. Remove the ekuru mixture until it is finished in a container of your choice with aluminum foil or banana leaves and place it in a pot of boiling water.
  7. Cover the packages with foil or a plastic bag to keep the heat inside the jar. Then cover with a pan and cook over medium heat—Cook for at least an hour.
  8. After an hour, check the ekuru by placing a knife on one of the recipes, and if the knife comes out slowly, your food is ready. If not, allow some more time.
  9. Serve with stew or sauce of your choice.
