How To Prepare Africam Biltong Stew

Traditional African Biltong Stew

Biltong is a highly regarded South African delicacy made from beef or game, dried and seasoned with spices like whole coriander seeds.

Adding peanut butter to enrich the stew is probably done because the meat is usually not affordable, so a different source of protein is sought to supplement what would otherwise be consumed by the meat.

The preparation of this stew is easy because all the ingredients can be eaten the way it is, so it does not take much time to cook. On the other hand, this pepper may not be suitable food for practical reasons because biltong is quite expensive. If you don’t want to spend that much money, you can always make this stew. Use chicken breast and 2 strips of smoked bacon to enhance the flavor.

It is best served with polenta and green vegetable cheese. It is traditionally served with fruit and cabbage, as shown in the picture.

Ingredients

  • 1 tablespoon of peanut oil
  • 11 ounces of biltong (or substitute for breast or chicken breast and 2 strips of smoked bacon)
  • 1 onion (chopped)
  • 2 cloves of garlic
  • 1 teaspoon of ginger (fresh grated)
  • 2 tablespoons concentrated tomato
  • 2 tablespoons peanut butter
  • 2 tomatoes (chopped)
  • Optional: cayenne pepper
  • 1/2 cup water

Steps to do it

  1. Fry the chopped onions, garlic, and ginger for a few minutes or until translucent.
  2. Add biltong and stir for a few seconds. Now add the tomato puree and peanut butter and stir to coat with biltong.
  3. Add chopped tomatoes and cook for 5 minutes until slightly reduced. Add the water and simmer for 10 minutes until the stew is reduced to a very thick sauce. If using chicken breasts, make sure the pieces are cooked well before eating.
