How To Prepare Nigerian Adalu (Beans And Corn) With This Simple Recipe
Adalu is an indigenous delicacy eaten mainly by westerners. It is made from a combination of beans and corn cooked together and is a delicious and great way to spice up your menu.

INGREDIENTS
- 3 cups of beans
- 1 cup sweet corn (if you don’t have raw corn)
- 2 red peppers – tatashe
- 1 red onion
- 2-3 pieces of rodo ata – scotch cap/habanero pepper
- palm oil
- salt
- Spice cubes
How to Prepare
- Cook the beans with enough water. Chop half the onions and add to the pan. Let it cook until the beans are tender. Look closely at the beans; you don’t want to overcook them and soften them. If you still have plenty of water, remove it.
- Mix the peppers, the stork, and the rest of the onions with some water and set aside.
- When the beans are soft, and there is little water left in the pan, add the pepper from step 2, sweet corn, salt, and a cube of spices. Stir and cook for another 10 minutes.
- After 10 minutes, stir the beans and taste the salt and spices. Repeat the season as needed. Add a good amount of palm oil. Stir and cook for another 5 minutes, and you’re done.
