How To Prepare Ghanaian Nkatenkwan With These Recipe

This Ghanaian dish, called Nkatenkwan or Peanut Soup, is popular in West Africa.

With our variations, the soup can be changed as desired. For example, use other vegetables to make a clear soup.

INGREDIENTS

Shopping list

  • 2 pounds of chicken drumsticks
  • 2 cups okra
  • 2 medium tomatoes, quarters
  • 5 – 6 bowls of chicken or vegetable soup
  • 1 cup of peanut butter
  • 1 large onion, cut into rings
  • 1 inch chopped ginger
  • salt and pepper

Culinary Spice Kit

  • Bag [1] Rosemary, bay leaf
  • Bag [2] Whole grains of paradise

INSTRUCTIONS

  1. In a large bowl, add 3 broth of onion, ginger, tomato, okra, drumstick, salt, and pepper to taste and Nkatenkwan spices [1].
  2. Bring to a boil—Cook over medium-low heat for 15 minutes.
  3. Put out the fire. Remove the drumstick and put it away.
  4. Move the soup to the FOOD PROCESSOR and mix it until smooth. Set aside.
  5. Heat 2 cups of broth in the same pan. Add peanut butter and melt in broth over low heat, stirring constantly.
  6. Add the blended soup and drumstick. Stir well.
  7. Optionally put more broth for a thinner soup.
  8. Cook soup over medium heat for 20 minutes.
  9. Sprinkle Nkatenkwan spices [2] in the spicy soup to taste of the mill or whole.
  10. Enjoy!

Notes / Variations

  • Replace 1 pound chicken breast or thigh, cut into pieces or beef stew. Adjust the cooking time and add more soups as needed.
  • Replace okra with green beans, kale, or cabbage.
  • Replace peanut butter with other nuts.
  •  For clear soup, skip the peanut butter and step 4.
  •  Without food processor: chop onions and grate ginger. In Step 3, upload everything to BOWL. Skip: Step 4. In Step 6, return everything to the pot.
