Try this mouthwatering attiéké: An Ivory coast native food

Attiéké is a traditional Ivorian dish made from fermented cassava. It is often presented as an accompaniment to chicken or fish.

INGREDIENTS

  • 2 cups attiéké (in a box)

  • 3 tomatoes, finely chopped
  • 1 finely diced red onion
  • 1 green hot pepper, finely chopped
  • ½ Maggi cube (optional)
  • Vegetable oil

Roast chicken (or grilled fish)

Equipment

  • Steam basket

INSTRUCTIONS

  1. Add the attiéké to a large bowl and moisten with at least 1 cup (250 ml) of water or more to obtain a wet grain. Separate by mixing between your fingers.
  2. Place the moistened attiéké in a clean steamed cloth. Close the cloth and steam attiéké for 8 to 10 minutes.
  3. Open the cloth, stir attiéké a little and close the cloth again. Continue steaming for 8-10 minutes.
  4. Pour the attiéké into a bowl and fluff with a fork.

  1. In a salad bowl, combine the tomatoes, red onions, and peppers.
  2. Season with vegetable oil and the crumbled Maggi cube.

Assembly

  1. On a plate, present the attiéké garnished with salad, as an accompaniment to a piece of roast chicken or grilled fish.
