How to Prepare Domoda — Gambian Peanut Stew with Recipes

Domoda is the national dish of the Gambia. A delicious “groundnut stew” (peanuts) is made from any available vegetable, usually pumpkin or sweet potatoes and a spicy base.

Ingredients

  • 1 pound of steak or 1 pound of chicken breast, cut into half-inch pieces (or use portions of chicken bone and simmer in sauce; when cooked, leave whole pieces or remove the meat from the bones and add it to the stew.)
  • 1 large onion, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 3 Roma tomatoes, cut into cubes
  • ½ cans (3 oz) of tomato paste
  • ¾ cups of unsweetened natural peanut butter
  • 4 diced tomatoes Maggi or Knorr
  • 3 cups of water
  • scotch bonnet chilies, diced according ​​to thermal preferences
  • 4 cups pumpkin or sweet potatoes, diced
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large Dutch oven. Saute the onions until golden.
  2. Add the meat and garlic and continue to saute until the meat is no longer pink.
  3. Add the tomatoes and cook for 3 minutes.
  4. Add tomato paste, chilies, peanut butter, and stir to combine.
  5. Add water and bouillon cubes.
  6. Bring to a boil, reduce heat, cover and simmer for 15 minutes, stirring occasionally.
  7. Add squash, cover, and continue to cook for 35 to 40 minutes or until the pumpkin is soft, occasionally stirring—season with salt and pepper.
  8. Serve hot with rice. This stew tastes even better the next day.
